This was absolutely fantastic. I’m on a miso kick right now, and its use here was unexpected and utterly delicious. I only peel squash when necessary (it’s so nutritious!), but I rarely see it left intact in soup recipes. I was skeptical, but excited to try it in this recipe. To my surprise, the broth turned out silkier than I could have imagined! So smooth and luxurious, indulgent without an ounce of guilt.
I added a shake of crushed red pepper flakes during the simmer step, and topped with what I had on hand (scallions and sesame seeds, plus other crunchies like toasted almonds and oven-crisped chickpeas). I also tossed my soba noodles with a small amount of toasted sesame oil after cooking, too keep them from sticking. I used an immersion blender, which worked seamlessly. I was planning to try this with different types of winter squash, but the red kuri worked so well, I’m afraid to stray from perfection! Thank you for a wonderful, creative recipe.
