I’m gluten free, so I substituted out the spelt flour for 3/4 of a cup of almond flour and 1 1/4 cups of King Arthur cup for cup gluten free flour. I also was a little heavy handed on the vanilla and spices (except the ginger, I used ~3/4 tbsp), and baked the cookies for about 15 minutes. I also mixed the palm sugar in with the wet ingredients and refrigerated the dough for 6-8 hours before baking it.
The cookies turned out incredible!! So glad I finally gave this recipe a try. My wife loved them too!
