Oh my God!! They are absolutely delicious! I couldn’t find parsley roots, so I used parsnip instead and the result was divine. Both my boyfriend and I finished an entire plate of “fries” in something like 10 minutes. The ketchup didn’t get the thick consistency I was looking for, but it was still good. Maybe it has to do with the blender? Or maybe I didn’t blend it for enough minutes? Giulia

you can hardly call them “fries” since they are baked in an oven! Wonder if these parsley root strips can truly be fried in hot oil? That’s the only way to go for me.
