A great recipe.

I grabbed onto the recipe to try for my father in law, who is on a liver cleansing diet. I got Paul Pitchford’s book, on your recommendation, and I love all the wisdom he has to share about gently restoring your body’s liver health. As far as the cake goes, I had to try the recipe twice: people who have had problems with their cakes turning out too wet may need to reduce the applesauce by 1/4 cup, as I did, and omit one egg. It turned out so nice, and I like how the flavors mellow after a day or two. Lovely! Thanks for your enthusiasm and advice, friend.

Thank you!

Because it is so dense and moist, even with my convection oven I had to cook it for 50 minutes and then turned the oven off and left it in for another hour. What a unique twist on cake, Sarah!

I cannot explain how much my family adores it. I’ve been making it with a labneh icing (I mix some orange rind and juice through it with a little maple syrup and cinnamon) and top that with some of the ginger pepitas you put in your sweet potato and leek soup. Divine!
