Cooled on counter and then in the fridge. The only issue I had was the coconut oil showed white and solid around the edge as the berries shrunk quite a bit with the cooling process. They were fat and filled the top very well before cooking. Decided to shake a little (sorry) powdered sugar on top as the solid coconut oil was quite noticeable. Crust was great!

I made this for a work thanksgiving potluck. I used chia seeds and was a little skeptical when I pulled the tart out of the oven because it was still pretty liquidy but it firmed up overnight in the fridge and was very tasty. I didn’t have brown rice syrup so I used about 1/3 cup honey and 1/3 cup maple syrup instead of the 1 cup rice syrup and it worked. Loved the crust – so earthy and nutty and held up really well even topped with a somewhat goopy mixture during baking! I had mostly buckwheat with a touch of brown rice flour in the crust. Thank you for making healthy things delicious!

This prize winning pie sounds fabulous and I am making it for a dinner party this weekend. My question to those who have made it, or to Sarah or to Megan, can I make the pie the day before the dinner party? I really hate trying a new recipe the day of the event and look for recipes that I can make in advance. Thank you so much!
